For just a file server load Ubuntu Linux with Samba. Ubuntu is a free download and works on just about any ol machine you might have around. Windows, Mac, Linux, will all work fine with that setup.
If it were me I would load the server version, much more secure and stable although the desktop version will also work just fine.

It depends on what you want to do with the server. If its just sharing out files. any server can suffice if it has tcp/ip capabilities. Now if you want to centrally control group policies then Windows server or Novell will do the trick. If you are really worried about viruses use a unix or linux server. The Unix/Linux if you have the knowledge cost less as well. Linux/Unix does not require as much computing power as the other two.and you can download free copies
A server compatible with all types of computers can be a windows 2k3 enterprise edition for being most most simplest than any other operating system and it's easy setup, simple to understand .
but for powerful or somewhat difficult to use Linux can be preferred
